Easter 2013
We had a pretty low key Easter this year.
Colton kicked off Easter weekend by eating a delicious "apple" a.k.a. nectarine.
The Saturday before Easter I enjoyed a mini spa day complete with eyebrow wax, manicure and this pretty pink pedicure :)
Our house was decorated for Easter!
The Easter Bunny brought Colton's second Easter basket.
He is so into tractors right now.
I swear he has just about every model from Target.
We died Easter Eggs on Easter.
My favorites were the pink and blue ones.
My pink one is in the middle:)
I cooked a big Easter lunch.
This Spinach Strawberry Salad was devoured by everyone.
Spinach Strawberry Salad
Ingredients:
6 ounces (6 cups) baby spinach leaves
1 pint fresh strawberries, hulled and sliced
1/4 cup thinly sliced red onion
1/4 cup crumbled feta cheese
3-4 tablespoons raspberry vinaigrette
1/2 cup candied pecans
Place all ingredients in a big bowl and toss together.
I recommend serving the dressing on the side.
Candied Pecans
Ingredients:
16 ounces of pecans, halved
1 egg white
1 tbsp water
1 tsp vanilla extract
3/4 cup sugar
1 tsp cinnamon
Preheat oven to 250 degrees.
Mix all ingredients in a bowl and pour on a foil lined baking sheet.
Bake for 1 hour stirring pecans every 15 minutes.
Cool slightly before serving.
Since being on the P.I.N.K. Method for almost 2 months I have lost a total of 17 pounds.
I love to bake but did not want to screw up my progress with an unhealthy desert.

Strawberry Soda Cupcakes!
Ingredients:
1 box strawberry cake mix
12 ounces diet 7up
2 cups fresh strawberries chopped
small container of light or fat free cool whip (you will not use the whole container)
Preheat oven to 350 degrees.
Mix cake mix, chopped strawberries and 7up together.
Chop your strawberries.
Place 24 cupcake liners in 2 cupcake pans.
Fill each liner with 1/4 cup of batter.
Bake for 20 minutes
Each cupcake only has 95 calories!
You can't beat that!
All in all we fully enjoyed our low key Easter weekend!
