14 week Stats

Well its been a while since my last post so I thought I would update everyone on the baby news. We went to my 2nd appointment last week. We listened to the baby's heartbeat, what a sweet sound, and also got to see the baby on the ultrasound. It was so amazing seeing how much our lil munchkin has grown since the first ultrasound. We got a great picture of the baby's profile. Looks like the baby will have my nose. We also got to see the baby waive at us. It was the most precious thing I have ever seen. The lil munchkin has the cutest little hand. At one point I laughed because of how darn cute it was and then the baby started doing flips and summer salts in my tummy. We are already so in love with lil munchkin and cannot wait to meet our precious baby! I will post ultra sound pics soon. I have my next appointment at the end of this month and have a feeling that we will find out if lil munchkin is a boy or a girl!

An Early Christmas Gift

As of yesterday afternoon it is official........we are going to have a precious baby! The due date is July 11, 2011 and we could not be more excited! I had my first ultrasound yesterday and got to hear the baby's heartbeat! What a sweet sound! The doctor said the baby has a strong healthy heartbeat and everything looks great. The baby is not even an inch long yet so we decided we will call the baby butter bean until we find out what we are having. On Monday I will be 9 weeks and I cannot wait for the next nine weeks to go by so I can find out if we are having a boy or a girl! This is the best Christmas present ever and we feel so blessed!

An Easy & Delicious Recipe

I really enjoy this recipe and make it for my husband all the time. Since I usually make it for the two of us, the recipe lists the amount of ingredients needed for two portions, but you can increase the amount of servings depending on how many people you will be cooking for. This recipe is also great with chicken and steak if you do not care for fish. ENJOY!

Easy & Delicious Fish Packetsapproximate cooking time 40 minutes
Ingredients:
Two fillets of your favorite mild fish (I use fresh Tilapia or Mahi Mahi)
1 medium yellow onion sliced in thin rings
2 yellow summer squash sliced
1 clove of garlic grated (I use a micro plane to grate mine but you can also use a regular grater)
1 cup of fresh green beans
2 chicken bullion cubes (I have also used the beef flavored cubes and they work as well)
Use one cube per packet
1 tsp of fresh grated pepper
1 tbsp extra virgin olive oil

Equipment:
2 twelve inch squares of aluminum foil (you may need longer sheets depending on how much you put in your packets)
Cookie sheet
Micro plane grater or.............
Box Grater


Directions:
Pre-heat oven to 400 degrees
Lay the two sheets of aluminum foil on top of a cookie sheet
Place one fish fillet on each sheet of foil
Slice summer squash and yellow onion into thin rings
Sprinkle sliced onion on top of squash
Cover the fillets with the sliced squash
Place green beans on top of squash
Drizzle olive oil over vegetables
Grate garlic clove in a small bowl
Divide grated garlic in half and sprinkle over vegetables in each packet.
Crush bullion cubes (each packet gets one cube)
Sprinkle over vegetables
Grate fresh black pepper over vegetables

Wrap vegetables and put in the oven for 40 minutes (if you use chicken or steak you might need to decrease or increase cooking time.)

Birthday Weekend & A Fun Recipe

This weekend we celebrated Josh's 33rd birthday. We decided to do the main party on Saturday night so we could also enjoy the Florida State v.s. Miami game. GO NOLES! We had tons of fun hanging out with friends, watching football and eating some great food. I also took Josh out to Andrews 228 on Friday night. That restaurant is so amazing. Enjoy the pics!

Here is a picture of Josh's cake that I designed at the Cake Shop! Josh is an avid fisher and loves to go every chance he gets so I thought he would just love this cake! It was also very good!

I made my Super Easy Cream Cheese Party Dip for his birthday. He loves this dip and I try to make it every time we have a party at our house.


The recipe is super easy.
Super Easy Cream Cheese Party Dip

Ingredients:
3 8 oz packages of cream cheese
2 cups shredded sharp cheddar cheese
1 9 oz can of Hormel Chili with beans (just grab the largest can you can find)

Directions:
Pre-heat oven to 350 degrees
Let cream cheese come to room temperature and spread an even layer on the bottom of a large casserole pan.
Pour the chili on top of the cream cheese and spread evenly till the cream cheese is covered.
Cover the chili layer with the shredded cheddar cheese
Put dip in over and bake for 20 minutes or until bubbly.
Serve with your favorite chips. We like Tostitos scoops.

Birthday in Pictures


Sorry it took me so long to post B's weekend long birthday extravaganza pictures. Her birthday started on a Thursday and did not end until Sunday! We had a party at our house for family on Thursday night and then on Saturday we had a party for family and friends at my mom's house. Enjoy the pictures!

Here are some pictures from Wednesday night after Josh and I got done shopping. We used black, white and purple streamers to go with the Twilight theme Breanna wanted. I made bow to go in the corners of the room and lined the top of the ceiling with the streamers twisted together. I thought it looked cute.




Here is her Happy Birthday Banner. You can also see the streamers in this picture.


Here are her plates and napkins that I searched the whole city of Tallahassee for. You can see the cups I wrapped in her coordinating birthday wrapping paper. I thought they gave the table a nice touch along with the birthday confetti and table cover.


These are the cute Chinese take out party favor containers.

Here is another view of the table and some of her goodies. We found that lamp at Target for only $15.00 bucks!

We found this bean bag chair at Target as well. I think it was the only one left in Tallahassee. We also searched the whole city for a bean bag chair.


This is the side table we found. Breanna said she really wanted one for her birthday so we were so happy to find her this great one! It looks so cute with the lamp.

On Saturday we headed over to my parents house for the second birthday. My mom made these adorable pom poms that she hung from the wood beams on her ceiling. She found this nifty craft project in the Martha Stewart catalog.
